Enzyme solutions for food processors
1. What are the factors to consider when we are selecting an enzyme to be used as a food addictive?
Temperature, pH, water content, reaction times etc.

2. Can enzymes create savory flavors? How? Give examples.
Caseins and whey proteins can be modified with an enzyme blend to create savory flavors for the cheese industry or to enhance yogurt and other milk-based products.

3. How does enzyme help in health in dairy industry?
Lactase which can break down lactose, helps modifying the products for the lactose-intolerant market. This product can be consumed by consumers who are having lactose-intolerant.

4. Give an example where enzyme can be used by manufacturer to safe cost.

“Meyaard cites the example of the soft drink industry, which uses vast amounts of high fructose corn syrup. To meet their needs for bulk HFCS, enzymologists developed low-cost, genetically engineered enzymes to speed syrup production. Of course, HFCS can be produced without enzymes, but the syrup supplier then winds up with tremendous costs in terms of energy and additional acid chemical processing to remove the degradation byproducts.

Alpha amylase, glucoamylase or glucose isomerase can be used to produce HFCS easily and in shorter time, without producing other undesirable by product(enzyme reaction is specific). This is especially useful for the producing bulk HFCS.

We were asked today (ohno, it was yesterday!) in class, why is the activity of enzyme different at different stage.
ok, should take care of my pancreas now, it is calling me to ZzZZzz..recharge energy!
Can i dream what is written on the slide today?
